🥄 Brown Butter Mashed Carrots & Parsnips

If you’re looking for a cozy twist on classic mashed potatoes, this dish is about to become your new favorite. These Brown Butter Mashed Carrots & Parsnips are creamy, nutty, subtly sweet, and absolutely irresistible.

We served them at a recent dinner party and — no exaggeration — the bowl was scraped clean by the end of the night. That’s always the sign of a winning recipe.

And if you’re parsnip-unsure, trust me… this is the dish that will convert you. Parsnips add a warm, slightly spicy earthiness that plays beautifully with the sweetness of the carrots and the richness of the brown butter. One bite and you’ll understand why this has become a new family staple.

✨ Why You’ll Love This Dish

  • Comforting but elevated — perfect for weeknights or special occasions
  • Simple ingredients that come together quickly
  • Unexpected flavor thanks to the whisper of spice from the parsnips
  • Crowd-pleasing — the clean serving bowl doesn’t lie!
  • Pairs beautifully with roasted chicken, pork tenderloin, or a cozy braise

Whether you’re hosting a dinner party or just craving something warm and wonderful, this mash deserves a spot on your table.

🧈 The Brown Butter Magic

The secret here is the brown butter — that nutty, toasty richness that takes vegetables from good to unforgettable.
It’s an extra step that’s absolutely worth it and transforms the dish into something special.

Once you try it, you may never go back to plain butter again.

🥄 Brown Butter Mashed Carrots & Parsnips

2 lbs carrots, peeled and chopped into 1-inch pieces
2 lbs parsnips, peeled and chopped into 1-inch pieces
6 tbsp unsalted butter
½ cup heavy cream (or milk)
1 tsp salt, plus more to taste
Âź tsp black pepper
1 thyme sprig
Optional: 1–2 tsp honey or maple syrup for extra sweetness

  1. In a large pot, add carrots and parsnips and cover with cold, salted water.
  2. Bring to a boil, then reduce heat to medium and simmer for 20–25 minutes, until very tender.
  3. Drain well and return to the pot to let excess steam escape (this keeps your mash from being watery).
  4. In a small saucepan, melt the butter over medium heat.
  5. Continue cooking, swirling the pan often, until the butter turns golden brown and smells nutty — about 4–5 minutes.
  6. Remove from heat immediately to prevent burning.
  7. Add the browned butter, cream, salt, and pepper to the cooked carrots and parsnips.
  8. Mash with a potato masher for a rustic texture or blend with a hand mixer or food processor for a smoother purĂŠe. (I use a food processor).
  9. Taste and adjust seasoning — add a drizzle of honey or maple syrup if you’d like a touch more sweetness.
  10. Transfer to a serving bowl and drizzle with a little extra browned butter and garnish with thyme leaves.
