There’s something about a warm, cheesy egg dish that makes breakfast feel a little more special. These Baked Eggs Florentine with Ham combine savory ham, tender spinach in a homemade Parmesan cream sauce, fresh tomatoes, and eggs baked right on top. It’s comforting without being overly heavy, and it’s just as welcome at the dinner table as it is at brunch.
Traditional Eggs Florentine often comes with a rich sauce and an English muffin. This version takes a different approach, bringing those familiar flavors together in one baking dish. And instead of using packaged creamed spinach, we’re making a simple homemade version with fresh spinach, a little milk, and Parmesan cheese.
What I especially like about this recipe is its flexibility. Make the spinach ahead, bake everything in one dish, or use individual ramekins when you’re having friends over. It’s a lovely way to make an ordinary morning feel like an occasion without spending the whole morning in the kitchen.
Why You’ll Love These Baked Eggs Florentine
- A satisfying meal with plenty of protein. Eggs, ham, and cheese make this a substantial breakfast, brunch, or light dinner.
- Fresh spinach makes a difference. The homemade Parmesan cream sauce gives the spinach a rich, savory flavor without relying on a packaged shortcut.
- It’s naturally versatile. Bake everything in one dish for a family meal or use individual ramekins for a pretty brunch presentation.
- You can get ahead of the game. Prepare the creamed spinach in advance and save yourself work when it’s time to cook.
- Gluten-free without feeling like a compromise. With gluten-free flour and properly labeled ingredients, there’s no need for bread or a traditional flour-based sauce.

Baked Eggs Florentine with Ham & Parmesan Creamed Spinach
Ingredients
- 1 tablespoon olive oil
- ÂĽ cup finely chopped shallot
- 2 garlic cloves minced
- 12 ounces fresh baby spinach roughly chopped
- 1 tablespoon butter
- 1 tablespoon certified gluten-free all-purpose flour
- Âľ cup 2% milk
- ÂĽ cup grated Parmesan cheese
- â…› teaspoon ground nutmeg
- ÂĽ teaspoon kosher salt plus more to taste
- ÂĽ teaspoon freshly ground black pepper
- 4 slices gluten-free deli ham approximately 4 ounces total
- ½ cup diced Roma tomatoes seeds removed
- 4 large eggs
- ÂĽ cup shredded part-skim mozzarella cheese
Instructions
- Heat the oven to 375°F. Lightly grease an 8-inch square baking dish or four individual oven-safe ramekins.
- Heat the olive oil in a large skillet over medium heat. Add the shallot and cook for 2–3 minutes until softened. Add the garlic and cook for 30 seconds until fragrant.
- Add the fresh spinach in batches, stirring until wilted, about 4–5 minutes. Transfer the spinach to a colander and gently press out excess moisture.
- In the same skillet, melt the butter over medium heat. Whisk in the gluten-free flour and cook for 1 minute. Gradually whisk in the milk and cook for 2–3 minutes, stirring, until slightly thickened.
- Stir in the Parmesan cheese, nutmeg, salt, and pepper. Return the spinach to the skillet and stir until evenly coated. Taste and adjust the seasoning.
- Arrange the ham slices in the prepared baking dish, creating four portions. Spoon the creamed spinach evenly over the ham. Scatter the diced tomatoes over the spinach. Using the back of a spoon, make four indentations and carefully crack one egg into each.
- Sprinkle the mozzarella around the eggs. Bake on the middle rack for 15–22 minutes, until the egg whites are fully set and the yolks reach your preferred doneness. For food safety, cook eggs to 160°F. Let stand for 2 minutes before serving.
Notes
- Make it a complete meal: Serve with ½ cup fresh berries or a small serving of roasted asparagus for a colorful brunch.
- Individual servings: Four 10–12-ounce oven-safe ramekins make a lovely presentation. Place them on a baking sheet for easier handling.
- Egg doneness: Begin checking at 15 minutes. Baking time depends on the depth of the dish and the temperature of the spinach mixture. Cook eggs to 160°F for food safety.
- Gluten-free reminder: Check the labels on deli ham, flour, packaged cheese, and any prepared creamed spinach.
A Few Tips for Perfect Baked Eggs
Keep the Spinach Creamy, Not Watery
Fresh spinach releases quite a bit of moisture as it cooks. After wilting, gently press out the excess liquid before adding it to the Parmesan sauce. That little step helps keep the finished dish creamy rather than watery.
Watch the Eggs Closely
The eggs are the one part of this recipe that deserve your attention. Start checking them at the 15-minute mark, especially if you’re using individual ramekins. The whites should be completely set, and for food safety, eggs should reach 160°F.
Make It Pretty for Brunch
Individual oven-safe ramekins make this dish feel special without creating much additional work. Set the ramekins on a baking sheet so they’re easier to move in and out of the oven, and serve them with fresh berries for a little color.
Is This Recipe Gluten-Free?
Yes! This Baked Eggs Florentine recipe is designed to be gluten-free when made with certified gluten-free all-purpose flour and appropriately labeled ingredients.
Be sure to check your deli ham and packaged cheeses for gluten-containing ingredients or additives. If you’re using prepared creamed spinach for the easiest shortcut, check the label carefully because some varieties contain wheat-based thickeners.
This recipe does contain dairy from the butter, milk, Parmesan, and mozzarella.
