Sometimes the simplest recipes are the ones worth getting just right. Scrambled eggs certainly fall into that category. They’re quick, familiar, and easy to make, but there’s a big difference between ordinary scrambled eggs and a skillet full of soft, creamy eggs.
These Creamy Scrambled Eggs with Cheddar, Chives & Tomatoes bring a little more flavor and color to the breakfast table. Sharp cheddar adds richness, cherry tomatoes bring a touch of sweetness, and fresh spinach and chives round everything out. There’s even a little whole-grain Dijon mustard tucked into the eggs for extra depth.
Best of all, this gluten-free breakfast serves four and takes just 20 minutes. It’s a practical option for a weekday morning, a leisurely weekend breakfast, or a casual brunch with friends.

- Extra creamy and cheesy. Gentle cooking and sharp cheddar create tender eggs with plenty of flavor.
- Colorful vegetables in every serving. Cherry tomatoes, spinach, and chives add freshness without complicated preparation.
- Naturally gluten-free. Just be sure your whole-grain Dijon mustard is labeled gluten-free.
- Easy to customize. Swap the chives for scallion tops or adjust the vegetables to suit your preferences.
The Secret to Creamy Scrambled Eggs
The most important ingredient in creamy scrambled eggs might actually be patience. Cooking eggs over low heat and stirring them gently allows small, tender curds to form instead of large, dry pieces. The goal is to keep the eggs moving without constantly beating them around the skillet.
The cheddar goes in when the eggs are almost set. That way, it melts into the eggs rather than sitting in a puddle at the bottom of the pan. One important detail: the eggs should reach 160°F for food safety. Use an instant-read thermometer to check the temperature while avoiding overcooking.
Creamy Scrambled Eggs with Cheddar, Chives & Tomatoes Recipe

Creamy Scrambled Eggs with Cheddar, Chives & Tomatoes
Ingredients
- 8 large eggs
- ¼ cup 2% milk
- 1½ teaspoons gluten-free whole-grain Dijon mustard
- 2 teaspoons unsalted butter
- ⅔ cup cherry tomatoes halved
- 1½ cups loosely packed baby spinach roughly chopped
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons finely chopped fresh chives or scallion tops
- ⅛ teaspoon freshly ground black pepper
- ⅛ teaspoon kosher salt
Instructions
- In a large bowl, whisk together the eggs, milk, and Dijon mustard until completely blended.
- Melt the butter in a large nonstick skillet over medium heat. Add the cherry tomatoes and cook for 2 minutes, stirring occasionally, until they begin to soften. Add the spinach and cook for another minute, just until wilted.
- Reduce the heat to low and pour the egg mixture into the skillet. Cook gently, stirring frequently with a silicone spatula and scraping the bottom and sides of the pan, for 5–7 minutes. The eggs should form soft, creamy curds.
- When the eggs are nearly set but still slightly glossy, sprinkle the cheddar evenly over the top. Gently fold it into the eggs and continue cooking until the cheese melts and the eggs reach 160°F.
- Remove the skillet from the heat. Sprinkle with the fresh chives, black pepper, and salt. Serve immediately while the eggs are warm and creamy.
Notes
Make It a Complete Breakfast
These scrambled eggs are satisfying on their own, but they’re also easy to turn into a more substantial breakfast. Serve them with roasted breakfast potatoes, a bowl of fresh berries, or toasted gluten-free sourdough bread. For a casual brunch, add a platter of seasonal fruit and let everyone help themselves.
If you’re serving guests, prepare your sides and set the table before cooking the eggs. Scrambled eggs are always at their best straight from the skillet.
Gluten-Free and Dairy-Free Options
This recipe is gluten-free when prepared with a verified gluten-free Dijon mustard and other suitable ingredients.
For a dairy-free variation, substitute unsweetened plain dairy-free milk, dairy-free butter, and a dairy-free cheddar-style alternative. The texture and flavor will vary depending on the products you choose.
A Little More Time Around the Table
One of the things I love about cooking is that a meal doesn’t have to be elaborate to bring people together. Sometimes a simple breakfast, a fresh pot of coffee, and a few extra minutes around the table are all you need.
And when you’re ready to host something a little more involved, my Complete Dinner Party Plans take care of the menu, recipes, prep timeline, welcome cocktail, and those little details that make gathering feel special.
Because great food brings people to the table. Meaningful moments keep them there.
